Creamy Macaroni and Cheese Recipe

250 grams macaroni (any type you prefer, such as penne, elbow, shells, or fusilli)
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
Salt and black pepper to taste
A pinch of nutmeg (optional)
1/2 cup shredded cheese (mozzarella, parmesan, cheddar, or your choice)

Cook the Macaroni:

In a large pot, cook the macaroni according to the package instructions until al dente. Drain and set aside.
Prepare the Béchamel Sauce:

In a saucepan, melt the butter over medium heat.
Add the flour and whisk continuously for a minute to create a smooth, homogeneous mixture (known as a roux).
Gradually add the milk while whisking constantly until you have a creamy, lump-free sauce.
Allow the sauce to simmer and thicken slightly while stirring. You can season with salt, pepper, and nutmeg to taste.
Combine Macaroni and Sauce:

Add the cooked macaroni to the sauce and mix well until the macaroni is coated with the sauce.
Incorporate the Cheese:

Add half of the shredded cheese to the macaroni and mix well.
Top with Cheese:

Transfer the macaroni and cheese to a serving dish and sprinkle the remaining shredded cheese on top.
Broiling (Optional):

Place the dish under the broiler or in the oven for a few minutes until the top is lightly browned.

Serve the creamy macaroni and cheese hot as a main dish or side, accompanied by vegetables or a salad. Garnish with chopped parsley if desired.
