Recipe: Mixed Vegetable Salad

Ingredients:
For the Sauce:

2 tablespoons Mustard
3 tablespoons Mayonnaise
1 tablespoon Ketchup
2 tablespoons Lemon Juice
1 tablespoon Olive Oil
1 teaspoon Salt
1/4 teaspoon Black Pepper
1 cup Corn (cooked)

2 Cucumbers (chopped)

1/2 cup Peas (cooked)

1 cup Potatoes (cooked and diced)

1/2 cup Carrots (cooked and diced)

Preparation:
For the Sauce:

In a separate bowl, combine mayonnaise, mustard, ketchup, lemon juice, olive oil, and season with salt and black pepper. Set the sauce aside.
Place the mixed vegetables (excluding carrots and potatoes) in a mixing bowl. Add half of the sauce and gently toss until the ingredients are well combined. Then add the carrots and potatoes, and pour in the remaining sauce. Gently mix.

Serve the salad cold.
